6 Thoughts Upon the End of My Food Challenge:

1. I really enjoyed having healthy and filling food! (Go figure, right?)

2. Cooking takes a lot of time. That I simply do not have between school, work, internships, homework, and trying to find a job…So we’ll see if I regress to my regular eating habits after this, or if I attempt semi-healthy, semi-filling meals.

3. I didn’t think I could cook, so the whole turning-out-to-not-be-that-bad-of-a-chef-thing was pretty exciting :)

4. I’m very goal oriented, so when I had a plan of action and was trying to accomplish something, I did much better than I normally do! Normally I come home hungry, open the fridge, moan about how hungry I am and how I don’t have any food, and then make myself a quesdilla. Which wouldn’t be too bad except for the part where it’s a daily occurrence.

5. Note to self: It’s a lot easier to cook when you have ingredients to work with in the fridge. Practically speaking, this means I should buy more than just bread and eggs next time I go to the grocery store.

6. Moral of the story: I can cook something filling and it will taste good.  (Most likely) 

Yes, those all may seem like fairly obvious lessons. And yes, I probably should have figured out 2 years ago that I can cook yummy things. But I didn’t. Just for future reference, living on eggs and bread is a great weight loss plan though! (I kid, I kid). Mostly this food challenge just made me want to give myself some more goals that I can achieve! I like feeling like I accomplished something :)

Anyone have any good ideas for another (cost-efficient) challenge? I’m so ready.
